Homemade pickled cucumbers
I love pickled cucumbers, especially when I make them myself with vegetables from the kitchen garden.
Ingredients
- 2 cups (1/2 kg) cucumber of your choice, sliced
- a little bit less than 1/2 cups (around 1 dl) pickling vinegar (12%)
- 1 cup (2 1/4 dl) sugar
- 1 1/4 cups (3 dl) water
- around 2 tbsp salt
- 5-6 dill heads
- 2 sliced garlic cloves
Ingegerd Norberg recently sent me this delicious pickled cucumber recipe. It works really well even for smaller quantities of cucumber too. Delicious!

Instructions:
Rinse the cucumbers.
Slice the cucumbers and put them in clean glass jars together with garlic and dill.
Make the brine by boiling vinegar, sugar, salt, and water for around 10 minutes.
Let the brine cool down before pouring it over the cucumbers.
Pickled cucumbers are a wonderful side to all kinds of dishes. Yum!
