Fried tomatoes with pasta
These sweet, fried tomatoes are almost too good to be true! I make mine with chili and garlic and serve them with a bowl of fresh pasta. It's the perfect lunch or evening snack!
- cherry tomatoes (or smaller tomatoes)
- chili pepper, fresh or chili flakes
- olive oil
I eat these tasty fried tomatoes almost every day and often take an extra portion as an evening snack. The hot chili and the sweet tomatoes make a great combination. Make sure to find really good tomatoes in the store if you want to make this dish, or why not grow them yourself and harvest them right before cooking?
Heat some olive oil in a frying pan.
Add the tomatoes (cut larger ones in half), chopped garlic and some chili.
Fry them quickly in a hot pan.
These fried tomatoes make a great lunch with some pasta and fresh basil.
