Asparagus and spinach soup
I make a lot of soup here at home. This time, I decided to go for a beautiful green asparagus and spinach soup. Enjoy!
Ingredients
- 1 asparagus bundle
- 5 oz (around 150 g) fresh spinach
- garlic
- 4 cups (around 1 liter) water
- vegetable stock
- 3/4 cups (around 2 dl) cream
- herbal salt
- pepper
- butter
Asparagus and spinach go really well together and this delicious soup tastes great both hot and cold. I rarely use a specific recipe when I make soup. It's so easy to just make it with whatever you happen to have at home. This is my suggestion for a delicious asparagus and spinach soup that you can adapt to what you have available in your kitchen.
Instructions:
Cut the asparagus into smaller pieces. Remove the hard woody asparagus ends.
Finely chop garlic.
Sear asparagus and garlic in a little butter, add water and stock. Save a few asparagus stalks for garnish.
Boil until the asparagus is almost completely soft.
Add cream and spinach, cook for a few minutes until the spinach softens too.
Blend the soup and season with salt and pepper.
Serve the asparagus and spinach soup with some nice bread and garnish with pan-fried asparagus and roasted sunflower seeds.
