Blackberry marmalade with lemon and vanilla
One of my readers sent me a recipe for blackberry marmalade, made with lemon and vanilla. So delicious on toast or with scones!
Ingredients
- around 2 cups (5 dl) blackberries
- a little bit more than 3/4 cups (2 dl) light muscovado sugar
- 1 cup (2 1/2 dl) jelly sugar
- zest from 2 lemons
- 1 fresh vanilla pod
Here comes another recipe from one of my readers: a blackberry marmalade with a twist. Made with muscovado sugar!

Instructions:
Cut the vanilla pod and use a knife to scrape the seeds from the pod.
Put the ingredients, and the vanilla pod, in a pot.
Let the marmalade simmer for 20-25 minutes. Remove the foam when necessary.
Use a spoon to crush the berries while you cook them.
Remove the vanilla pod and pour the marmalade into clean glass jars.
Let the marmalade cool down.
Serve with fresh scones and cottage cheese. So good!
