Baked fish with homegrown vegetables
This delicious fish fillet was baked in the oven with buttery new potatoes and green vegetables. Read on to learn how it's made!
Ingredients
- potatoes, preferably new potatoes
- butter
- herbs and vegetables like dill, parsley, fresh onion and snap peas
- salt
- fish fillet, for example salmon or cod
- shrimp
Baked fish packets with potatoes is a classic dish that reaches new heights with homegrown potatoes and fresh onions. I use all kinds of tasty vegetables and herbs in my packets, and of course a lot of butter too!
Instructions:
Turn the oven to 390 degrees (200 degrees Celsius.)
Boil the new potatoes and cut them into wedges.
Put some butter on a baking sheet and add potatoes.
Add you favorite herbs and vegetables like for example dill, parsley, fresh onions (use the onion greens too!) and snap peas. Sprinkle some salt on the veggies.
Put a fish fillet on the vegetables, for example salmon or cod. I'm using cod in this recipe.
Add some extra salt, butter and dill and sprinkle some shrimp on top.
Fold the baking sheet and tie a string around it to hold it together. Make sure that the opening of the packet is facing upwards.
Bake it in the oven for about 20 minutes, or 15 if the fillets are thin.
When it's time to eat, simply take the packets out of the oven and undo the knot to open the packet. That smell is priceless!
