Stir-fried vegetables with ginger and garlic
Stir-fried vegetables is such an easy and delicious dish that you can make with whatever you have available in the garden right now. Serve with glass noodles.
Ingredients
- mixed vegetables
- fresh ginger
- garlic
- chili
- oil
- salt
- glass noodles (if you want to)
This dish reminds me of some Chinese restaurants where the chefs stir-fry vegetables you pick yourself. It's so easy to make at home and it is the perfect dinner choice for anyone who grows their own food. Simply pick the vegetables that are in season now, or use some from the freezer.
You can eat the vegetables with fish, meat or shellfish if you want to. Just make sure to marinate and fry these products separately, so that you know they get cooked all the way through.
Instructions:
Cut the vegetables into large pieces. You can for example use broccoli, carrot, onion, leek, beans, corn, pak choi, kale, cabbage and tomatoes. Frozen vegetables are ok too.
Put the vegetables in a bowl and add a nice oil, plenty of grated garlic and ginger, and the spices.
Stir and let it marinate.
If you want to have glass noodles with your vegetables, cook them according to the instructions on the packaging and then marinate them with the vegetables.
Heat a pan and fry the vegetables and noodles on medium heat.
Serve your stir-fried vegetables straight away, with some fresh crispy vegetables on the side.
