Sara's homemade refried beans

My vegan refried beans taste amazing with vinaigrette and parsley. Yum!

Ingredients
  • fresh beans
  • vinegar
  • rapeseed oil
  • lemon
  • salt
  • pepper
  • sugar
  • parsley

Refried beans are just the best in summer. Make sure to grow a lot of beans so that you have enough to eat them fresh later.

Instructions:

Remove the beans from their pods. They should be fresh, don't let them become dry.
Boil the beans and change the water after around five minutes, this will prevent any stomach issues later.
Let the beans simmer in lightly salted water until soft.
Remove the water.
Use a handheld potato masher to mash the beans.
Make a vinaigrette from 1 tbsp vinegar, 3 tbsp rapeseed oil, lemon, salt, pepper, a pinch of sugar and plenty of chopped parsley.
Mix with the beans and let sit for a little while before you serve your refried beans.

Use the refried beans as a sandwich topping or a side to grilled vegetables. Enjoy!
