Meat sauce with Zucchini
Why not add some vegetables to your meat sauce? I especially love making my meat sauce with squash. Try it!
Ingredients:
- 2 lbs (around 1 kg) minced meat
- butter
- Zucchini
- tomatoes
- stock
- onion
- garlic
- parsnip, celery root, carrot
- celery stalk
- oregano
- bay leaves
- salt
- pepper
Why not make your meat sauce with plenty of vegetables? Adding greens to your sauce makes it both tastier and more healthy. Zucchini is one of those vegetables in my garden that I get a lot of, and I can use it in all kinds of dishes. I use squash in my stews, bread, and soups. Delicious!
Instructions:
Pan-fry minced meat and put the meat in a pot with a little bit of butter. You could also use a slow cooker.
Rinse and cut the Zucchini into smaller pieces. Cook in butter with chopped onion and garlic, and add the squash to the minced meat.
Add plenty of chopped tomatoes, a few handfuls of grated root vegetables, sliced celery roots and bay leaves.
Dilute the sauce with a little stock.
Season with salt and pepper, let the sauce simmer for 1-2 hours on low heat.
Add fresh oregano and more vegetables of your choice. Maybe some more fresh tomatoes, corn, bell peppers or beans?
Serve the meat sauce with pasta and a nice tomato salad.
Do you know anyone who refuses to eat meat sauce if it's made with vegetables? If so, boil the vegetables separately for around 30 minutes and then blend them and add to the meat. Use tomato puree add some extra color to your sauce.
