Homemade spinach guacamole
This alternative guacamole was made with spinach stems from homegrown spinach. Good for us and the environment!

Ingredients:
- spinach stems
- rapeseed oil
- lemon
- salt
I grow a lot of spinach and that means that I get plenty of spinach stems that are too stringy to eat as they are. But for this guacamole, I actually only use the stems. You could of course also use any leaves that you might have left.
Instructions:
Use a mixer to blend fresh spinach leaves with a splash of rapeseed oil and lemon juice. Season with salt.
My spinach guacamole tastes great with tacos, eat it as a dip together with vegetable sticks or on crisp bread. Enjoy!
