Delicious pea hummus
You don't need to use chickpeas when you make hummus. Try making it with dried peas instead. It's delicious!
Ingredients
- dried peas
- rapeseed oil
- lemon
- garlic
- salt
This bean dressing can be used as a sandwich topping or a side to many different dishes. It tastes a bit like regular chickpea hummus. You can make your pea hummus with many different types of peas and beans. Try using field peas, garden peas, dried yellow or green peas. I made mine with the beautiful pea variety Blauwschokker that has lovely purple pods.
Instructions:
Soak the dried peas in plenty of water for 12-24 hours.
Boil the peas in new, salted water on low heat until the peas are soft. This takes about an hour.
Remove the water and use a blender to mix the peas with the rapeseed oil, lemon, and garlic. Season the hummus with salt.
Serve as a topping or a delicious side to your favorite homemade meal.
