Crispy beet patties with feta cheese
Forget about the beef burgers, why not make beet patties instead? I make mine with feta cheese and chopped nuts. Delicious and really easy to make!
Makes 15 beet patties
- around 17 ounces (or 3 cups) of grated beets
- 1 egg
- around 1 cup (1 dl) of rye flour
- a bit more than 1 cup (150 grams) of crumbled feta cheese
- around 1 cups of nuts or seeds
This is one of my favorite dishes, I always try to make the patties when there are plenty of beets in the garden. I also freeze some of the beet patties and use them later. It's super easy! These patties just make a great lunch together with some seasonal vegetables. You can also make really tasty vegetarian burgers with a nice yogurt sauce and fresh sprouts.
Instructions:
Mix all the ingredients into a batter.
Make fifteen large patties.
Fry them in a pan with some olive oil.
If you want to freeze the beet patties and fry them later, simply place them on a tray with a baking sheet and put it straight in the freezer. Let them cool down and harden, then put them in a freezer bag. When you want to cook them, just simply take them out of the freezer and leave them for an hour to thaw before you fry them. These patties are absolutely delicious and really easy to make. The best kind of fast food is homemade!
