Homemade granola with raspberry flakes
It's really easy to make your own homemade granola. I love putting some dried fruits or berries from my own garden on top too. Yum!
Ingredients
- 2 cups (around 5 dl) mixed grains (for example oat, spelt or rye)
- 1/2 cups (around 1 dl) wheat pollard
- 1/2-2 cups (around 1-2 dl) pumpkin seeds
- 1/2 cups (around 1 dl) whole flax seeds
- 1/2 cups (around 1 dl) rapeseed oil
- 1/2 cups (around 1 dl) water
- 1 tbsp honey
- 1/2 cups (around 1 dl) dried fruits or berries
- raspberries (fresh or frozen)
Why go to the store to pick up your morning granola when you can make your own at home? Homemade granola is super easy to make and so delicious! I really like adding a splash of color on top with the raspberry flakes. So pretty!
Raspberry flakes:
Blend 1-1 1/2 cups of raspberries (fresh or frozen.) Push the batter through a fine mesh sieve to separate the seeds.
Pour the blended raspberries on a baking sheet and dry in the oven on at most 122 degrees (50 degrees Celsius), preferably with the oven door slightly ajar. This will take a few hours.
Crush the dried raspberry sheet so that you get smaller flakes.
Granola:
Turn the oven to 300 degrees (150 degrees Celsius.)
Mix all the dry ingredients except the fruit and the raspberry flakes in a bowl.
Mix oil, honey, and water. Pour the fluid over the dry ingredients and use your hands to knead the granola.
Put the granola on a tray with high sides. Bake in the oven until the granola gets some color. Stir as you go along.
Let the granola cool off and add the dried fruit and raspberry flakes.
Homemade granola tastes great with yogurt or milk and fresh berries.
